Salthouse Catering’s Commissary Spotlight - Girl Nextdough

Salthouse Catering has always enjoyed having unique commissary tenants as part of our busy kitchen space. We are pleased to highlight one of our favorite tenants in this month’s blog. Girl Nextdough is a small batch baking food truck created by pastry chef Caitlin Schumacher. The truck specializes in sourdough bagels, breakfast sandwiches and sweets. Caitlin was formerly the executive pastry chef of FIG in Charleston, working under Mike Lata and Melanie Durant. She actually purchased the food truck from her friend Melanie, who ran the Scram food truck from the Salthouse kitchen as well!

Catilin started the food truck with her father, John McCormick, in September 2021 and has been growing her business ever since. The food truck was born as a result of COVID staffing issues and industry changes and has flourished ever since.

As Caitlin’s first business, Girl Nextdough has captured the hearts and tastebuds of sourdough bagel and pastry lovers across Charleston! You can catch up with her at CornerCopia on James Island on most weekends!
